Transcription
There is a lot of good software out there to do the transcription work for you.
But it needs fine tuning, in SRT or VTT formats, with timecodes to the millisecond.
And there's training of AI technology to understand the voice, no matter where you're from. I have banked thousands of AI training hours. When your mobile recognizes what you say, it's partially down to me.

AI Annotation
An AI Annotator trains large language models (LLMs) to be better.
ChatGPT, Gemini, CoPilot...
There are two phases:

Reinforcement Learning from Human Feedback (RLHF)
- explaining to the LLM, in text, what it's doing wrong. -
Supervised Fine Tuning (SFT)
- rewriting the response so that the LLM can analyze the differences and improve future responses.
